Canarian Potatoes or Papas Arugardas

This is no ordianary Spud'U'Like, these are fantastic and a 'delecasey' of Tenerife. Go to any good traditional Tenerife Restuarant and you will see Papas Arugardas on the menu.

 

In any Tenerifian Restuarant you will see Canarian Potatoes on the menu, they are simple boiled potatoes which are often eaten luke warm, but how do you cook them?

Basically you; Wash the potatoes thoroughly in fresh water. Do not peel, add potatoes to saucepan of fresh water with 4 tablespoons of Rock Salt (in some Restuarants, the Potatoes will be cooked is Sea Water). Bring to the boil and simmer fast for 20 min until cooked. Drain off excess water, leaving small amount of water in bottom. Return to heat an boil off remaining liquid, keeping potatoes moving until skin are dry. Remove, any excess salt (not all) from skins with tissue and serve in separate, warmed bowl.

They make a great accompaniment to any Meat, Fish or Poultry dish.
